Responsibilities

  • Meticulously prepare fresh pasta dough daily using traditional techniques and high-quality ingredients, ensuring consistent texture and flavor.

  • Craft a diverse range of pasta shapes and styles, from classic fettuccine and ravioli to more intricate regional specialties.

  • Develop and execute innovative pasta dishes that align with the restaurant's seasonal menu and culinary vision.

  • Oversee all aspects of pasta production, including ingredient sourcing, inventory management, and quality control.

  • Maintain a pristine and organized workstation, adhering to strict food safety and sanitation standards at all times.

  • Collaborate with the kitchen team to ensure smooth service flow and timely execution of all pasta orders.

  • Train and mentor junior kitchen staff on proper pasta-making techniques and standards.

Requirements and Skills

  • Proven experience as a Pasta Chef or in a similar role within a reputable restaurant setting.

  • In-depth knowledge of various pasta doughs, their ingredients, and their optimal cooking methods.

  • Proficiency in making a wide array of pasta shapes and fillings, both by hand and with machinery.

  • Strong understanding of Italian cuisine and its foundational pasta dishes.

  • Excellent knife skills and attention to detail in preparation and presentation.

  • Ability to work efficiently under pressure in a fast-paced kitchen environment.

  • A keen palate for flavor balancing and a creative approach to dish development.

  • ServSafe certification or equivalent food handler's permit is a plus.
