Responsibilities

  • Prepare fresh pasta dough daily from scratch, adhering to established recipes and maintaining consistent quality for various pasta shapes.

  • Cook and plate pasta dishes to order with precision and speed, ensuring perfect al dente texture and attractive presentation.

  • Maintain a clean, organized, and sanitary workstation at all times, adhering to all food safety and hygiene standards.

  • Manage inventory of pasta ingredients, including flours, eggs, and other essential components, and communicate needs to the Head Chef or Sous Chef.

  • Assist in the development and execution of seasonal pasta specials, contributing creative ideas and recipe testing.

  • Collaborate effectively with other kitchen staff to ensure smooth service flow and timely delivery of all dishes.

  • Operate and maintain all pasta-making equipment, including mixers, extruders, and pasta rollers, ensuring proper cleaning and functionality.

Requirements and Skills

  • Proven experience as a Pasta Chef or in a similar role with a strong focus on fresh pasta preparation.

  • In-depth knowledge of various pasta dough types, ingredients, and techniques for creating different shapes and textures.

  • Proficiency in operating and maintaining commercial pasta-making equipment.

  • Excellent understanding of food safety and sanitation practices.

  • Ability to work efficiently in a fast-paced, high-volume kitchen environment, managing multiple tasks simultaneously.

  • Strong attention to detail and a commitment to producing high-quality, consistent results.
